Method
- Boil the Pasta
- Bring a large pot of salted water to a rolling boil.
- Add pasta and cook 1 minute less than package directions (it’ll finish cooking in the oven).
- Drain, drizzle with olive oil, and set aside.
- Marinate the Chicken
- While pasta boils, prepare the marination as above.
- Toss chicken pieces well to coat evenly.
- Let rest for flavor absorption.
- Sear the Chicken
- Heat a skillet over medium heat with 1 tbsp butter + 1 tbsp olive oil.
- Sear marinated chicken on both sides until golden and nearly cooked through.
- Remove and set aside it’ll finish baking later.
- Prepare the Alfredo Sauce
- In the same pan, melt 2 tbsp butter, add minced garlic, and sauté until fragrant (about 30 seconds don’t brown).
- Pour in cream and milk; stir gently as it warms.
- Sprinkle in Parmesan, stirring until melted into a silky sauce.
- Season with salt, pepper, and a pinch of nutmeg.
- If too thick, add a splash of milk; if too thin, simmer briefly to thicken.
- Combine Pasta and Sauce
- Add cooked pasta into the sauce, tossing gently so each piece is coated.
- Fold in the seared chicken pieces.
- The sauce should cling like velvet glossy, creamy, and rich.
- Layering for Baking
- Preheat oven to 375°F (190°C).
- In a baking dish, spread half the creamy pasta mixture.
- Sprinkle a layer of mozzarella.
- Add remaining pasta, pour leftover sauce on top, then finish with more mozzarella + Parmesan.
- Optional: add tiny butter cubes for glossy finish.
- Bake to Perfection
- Bake uncovered for 20–25 minutes, or until the top is golden and bubbly.
- For a crispy finish, broil for the last 2 minutes (watch closely).
- Rest & Serve
- Let the dish rest 5 minutes before serving.
- This resting period allows the sauce to set and flavors to mingle beautifully.
