Method
- Step 1 – Preparing the Bananas
- Peel and slice bananas into halves or thirds, depending on roll size. Toss gently with brown sugar, cinnamon, vanilla, and a pinch of salt. Let rest for 10 minutes so the sugar melts slightly and coats each piece in a light caramel syrup.
- Chef’s Note: This resting period is essential. It intensifies the sweetness and prevents the bananas from absorbing oil during frying.
- Step 2 – Setting Up the Wrapping Station
- Lay a spring roll wrapper in a diamond position. Place one banana piece horizontally near the bottom corner. Fold both sides over, then roll tightly toward the top corner. Seal the edge with a dab of flour-water paste.
- Repeat until all rolls are wrapped snugly about 8 pieces in total.
- Tip: Keep wrappers covered with a damp cloth while working to prevent them from drying out and cracking.
- Step 3 – Heating the Oil
- Pour oil into a deep frying pan (about 1½–2 inches deep) and heat to 170–175°C (340°F).
- Test with a small wrapper piece it should bubble instantly and rise to the top without burning.
- Consistency is key here: oil that’s too hot will brown the wrapper before the inside softens, while too cool will make rolls greasy.
- Step 4 – Frying to Golden Perfection (Deep-Fried Version)
- Carefully place 3–4 rolls at a time into the oil. Fry for 2–3 minutes per side, turning gently until golden brown and crisp.
- Remove and place on a wire rack (not paper towels!) to keep them airy and crunchy.
- Optional: For extra crispiness, double-fry first at 160°C for 90 seconds, rest for 2 minutes, then fry again at 180°C for 45 seconds. The result? Shatteringly crisp perfection.
- Step 5 – Air-Fryer Version (Healthier Alternative)
- Lightly brush each roll with oil and arrange in an air fryer basket. Cook at 180°C (355°F) for 8–10 minutes, flipping halfway through.
- They’ll emerge golden, slightly lighter in texture, but equally crunchy.
- Pro Tip: Brush lightly with melted butter post-air-frying for that glossy, bakery-style finish.
- Step 6 – Optional Sweet Glaze
- While rolls are still warm, drizzle with honey, condensed milk, or caramel. Sprinkle with toasted sesame or shredded coconut for extra aroma and crunch.
- For special occasions, top with a scoop of vanilla ice cream and watch it melt slowly into the crisp shell dessert heaven!
- Step 7 – Serving
- Serve immediately while warm. The contrast between the crispy exterior and the molten banana center is irresistible.
- Perfect as a quick treat after dinner, a tea-time snack, or a surprise dessert for guests.
Notes
- Storage: Best eaten fresh but can be stored in the fridge for up to 1 day.

- Substitutions: Try puff pastry sheets or rice paper for creative alternatives.
- Scaling: Double recipe easily it disappears fast!
- Meal Prep: Prepare and freeze before frying; cook directly from frozen when needed.
