- Step 1: Prepare the Ribs
- Remove the silver skin membrane from the back of each rack. This thin layer prevents flavors from penetrating and can make the ribs tough. Use a knife to lift one corner and then grip it with a paper towel to peel it off cleanly.
- Step 2: Apply the Marinade
- In a large bowl, whisk together olive oil, soy sauce, honey, vinegar, Worcestershire sauce, and minced garlic. Rub this mixture generously over the ribs, coating all sides. Let them marinate for at least 2 hours, ideally overnight, covered in the refrigerator.
- Step 3: Make the Dry Rub

- Step 5: Wrap the Ribs

- Step 9: Caramelize
- Increase the oven temperature to 425°F (220°C) or switch to the broiler setting. Bake uncovered for 10-15 minutes until the glaze becomes sticky and slightly charred.
