Method
- Prep the Corn:
- Husk and clean the corn, removing silk completely. Rinse under cold water and pat dry.
- (Optional: Blanch in boiling water for 3-4 minutes, then cool in ice water for vibrant color.)
- Make Cajun Butter:
- Whisk melted butter, Cajun seasoning, garlic powder, smoked paprika, cayenne, salt, pepper, and lemon/lime juice until smooth and well combined.
- Choose Your Cooking Method:
- Grill:
- Preheat to 220°C / 425°F. Brush corn with Cajun butter. Grill for 8-12 minutes, turning every 2-3 minutes for even charring.
- Oven-Roast:
- Preheat to 220°C / 425°F. Arrange corn on a baking sheet, brush with butter, and roast 18-22 minutes, turning halfway.
- Air Fryer:
- Preheat to 200°C / 400°F. Brush corn and cook 10-14 minutes, turning once midway.
- Foil Pack Method (Juicy Style):
- Wrap each cob in foil with 1-2 tbsp butter. Grill or bake 12-15 minutes, then uncover and char 2-3 minutes directly on flame.
- Finish:
- Brush with more Cajun butter while hot. Squeeze lemon/lime juice, sprinkle herbs, and add any toppings (Parmesan, chili flakes, etc.).

In my family, we finish Cajun corn with a drizzle of hot honey and lime that sweet-heat combo keeps everyone coming back for seconds.
