Method
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare the Mixture: In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, egg, Italian herbs, salt, and black pepper. Mix until all ingredients are well incorporated.
- Shape the Meatloaves: Divide the mixture into four equal parts. Shape each portion into a small loaf and place on a baking sheet lined with parchment paper.
- Prepare for Baking: Drizzle olive oil over the top of each meatloaf to enhance browning.
- Bake: Place the meatloaves in the preheated oven and bake for 25 minutes.
- Add Marinara Sauce: Remove from the oven and spoon marinara sauce over each meatloaf. Return to the oven and bake an additional 10 minutes, or until the internal temperature reaches 165°F (74°C).
- Garnish and Serve: Once cooked, remove the meatloaves from the oven. Garnish with chopped fresh parsley before serving.
